Nestled in the heart of the Scottish Highlands, we are surrounded by a rich tapestry of local producers, suppliers and growers – and we are passionate about supporting our communities and offering a locally sourced menu. Each plate celebrates the seafood landed on our shores, the meat reared in our valleys and fruit and vegetables grown in our farms. The Scottish Highlands offer a truly magnificent larder. So, let us bring it to you.

We understand the importance of knowing where our ingredients come from. That’s why we’re forging strong partnerships with local farmers, fishermen, and artisans who share our passion for quality and sustainability. From the fertile fields of Wester Hardmuir Farm to the abundant waters of Scrabster, we handpick each ingredient to create dishes that are not only delicious but also support our local economy. And, this reduces our carbon footprint too.

Seafood Provenance

We source our seafood from a number of Scottish suppliers. And, we choose Scottish fish and showcase sustainably farmed options where we can. After all, supporting our local fisheries supports our communities. One of our suppliers is Seastocks – owned by Inverness couple Billy & Zoe. Their ethos is to supply the finest luxury shellfish products, caught exclusively in the North of Scotland.

Leading by Example

The Kingsmills team are also passionate about inspiring change within large scale events. Displaying provenance across all our menus is one of our key ways of highlighting the spectacular locally sourced larder that we draw inspiration from. So, if you are hosting a gala dinner or a sustainable event, let us guide you through creating a highly impactful menu that treads lightly on the environment.

For example, at the Highlands & Islands Press Ball and Media Awards 2024, our kitchen team was tasked with producing a fully vegetarian menu. And so, we delivered! Scottish Tipples

In our Whisky Bar, the team offer a menu of the finest beverages including a number of Scottish options. From locally brewed beers from Black Isle Brewery, to locally sourced coffee from Inverness Coffee Roasting, there is a local taste for you to sample! And, that’s before we get started on the spirits! Our house pour spirits include Inverness Gin, Speyside Vodka and a vast collection of malt whiskies. If you’re not a whisky aficionado, fear not as we offer a tasting board to take you on a tour of our local distillery Tomatin.
